Hay que hacer un cierto esfuerzo para comprender porqué algo tan saludable como la sal, se ha convertido en nuestro tóxico diario. Como siempre, no hay un motivo único, sino una sumatoria de factores. Por ello conviene analizar el tema desde distintos ángulos: químico, físico, productivo, cultural, etc. Pero veremos que todos confluyen finalmente en el bendito interés económico, que -irónicamente- muestra poco interés por la salud. ¿Será que en la economía de los negocios, una persona sana no es “rentable”?
Analizaremos el problema de la sal desde dos aspectos complementarios: el plano material y el planoenergético. Podemos comenzar advirtiendo que el centro de la cuestión está en la refinación industrial. Analizada desde el punto de vista químico, la diferencia entre una sal marina integral y la moderna sal de mesa de uso corriente, resulta abismal. La simple evaporación del agua de mar, deja como consecuencia un residuo sólido, al cual llamamos sal. Este residuo está compuesto por los 84 elementos estables de la tabla periódica, aquella que estudiábamos en el colegio secundario. Por supuesto que el cloro y el sodio son los principales elementos cuantitativos, representando casi el 90% de su composición. Pero la importancia cualitativa de ese 10% restante es verdaderamente extraordinaria.
Dado que toda la vida del planeta surgió del lecho marino, es obvio que hay una semejanza intrínseca y funcional con aquella “sopa madre”. Todas las formas de vida (plantas, animales, humanos), llevamos incorporada dicha solución en nuestros fluidos internos (savia, líquidos intracelulares, plasma sanguíneo). De esto eran conscientes nuestros antepasados, gracias a su intuitiva visión holística; pero nuestro reduccionista modernismo industrial se encargó de echar por tierra esta perspectiva. Concretamente en la sal, se comenzó por pensar en términos de “suciedad”: había que lavarla y purificarla para presentarla como un producto “limpio e higiénico”. Este concepto funcionó -y lo más triste es que aún funciona a nivel masivo- también con otros alimentos básicos y sujetos a procesamiento industrial: harina, arroz, azúcar, aceite, etc.
EL PROBLEMA DE LA REFINACIÓN
Pero hay otras razones de “peso”, por las cuales la industria ha desarrollado complejos y costosos procedimientos de limpieza y purificación de la sal. Y es precisamente porque se fue descubriendo el gran valor industrial del componente básico de la sal (el cloruro de sodio ó cloruro sódico) en el desarrollo de los productos de síntesis química. Una vez liberado de “impurezas” (y por tanto del equilibrio iónico que le confieren los restantes 82 elementos), el cloruro de sodio es un reactivo perfecto y económico. Por esta razón se perfeccionó la técnica de refinación y limpieza, a fin de conseguir la máxima pureza en la producción de cloruro sódico. Esta sustancia se convirtió en un elemento imprescindible de la industria química, sobre todo para la producción de plásticos, aceites minerales, desmoldantes, etc. También la industria alimentaria la incorporó en su batería de aditivos preservantes, como inhibidor de procesos de descomposición: un ejemplo es el yogurt, que contiene cloruro de sodio, no como saborizante sino como conservante.
La Dra. Sherry Rogers aporta otra pista sobre el porqué de la refinación de la sal, en su libro “La cura se encuentra en la cocina”: “La sal de mesa común que ha invadido el mercado de Estados Unidos en los últimos 50 años, parece ser un subproducto de la manufactura de armas. Las grandes compañías (como la Morton Thiokol, fabricante de combustibles para cohetes) refinan sal para extraer ciertos minerales que luego utilizan en sus producciones bélicas y espaciales. En el proceso de refinación industrial, la sal de mesa pasa por temperaturas de 670ºC, lo cual altera definitivamente su natural estructura cristalina”.
Por estas razones se refina exhaustiva y prolijamente la sal en el mundo moderno. Una sola cifra nos permite comprender mejor esta realidad: el 93% de la sal que se refina en el planeta está destinada a fines industriales no alimentarios, un 4% es utilizado por la industria alimentaria como conservante; apenas el minoritario 3% restante se destina al uso como sal de mesa. Traducido en términos más sencillos, “de paso” la mesa “liga” los “beneficios” de la excelente “pureza” de la refinación industrial y nuestras amas de casa se “benefician” al disponer de un producto “inmaculado” y que no se apelmaza.
También existe otra importante fuente de cloruro de sodio, que si bien no proviene de la refinación, es consecuencia de un desecho industrial y por tanto arrastra la nocividad de la manipulación tecnológica, sobre todo a nivel energético. Nos referimos a las fábricas depastas para papel o “pasteras”, tan en boga últimamente por la cuestión ambiental. El cloruro de sodio es uno de los desechos emergentes del proceso de producción de la pasta celulósica, base de la industria papelera. Como rezan las advertencias de las películas, “cualquier relación entre esta actividad y marcas de sal, es solo pura coincidencia”.
Siguiendo con la refinación de la sal, digamos que en 1971 el gobierno japonés decretó que toda la sal para consumo humano se debía elaborar por el dudoso proceso de intercambio de iones, que usa 3.000 voltios y 120 amperes de electricidad para extraer los iones de cloruro de sodio del agua de mar. Un físico atómico, Katsuhiko Tani, contrario a esta decisión oficial, comenzó a realizar estudios al respecto, creando la Asociación de Investigación de la Sal.
En una de sus primeras experiencias, Tani trabajó con almejas vivas sumergidas en distintas concentraciones de sal naturalmente obtenida por evaporación de agua de mar. Luego imitó estas concentraciones con la sal para consumo humano y con la sal de potasio (cloruro potásico), un sustituto artificial para hipertensos. El resultado: las almejas sumergidas en las soluciones con sal natural reaccionaron abriendo sus caparazones, mientras aquellas sumergidas en las soluciones con sal obtenida por intercambio de iones o con sal de potasio, permanecieron cerradas, reaccionando como si estuvieran en un ambiente hostil.
Los párrafos anteriores tienen que ver con una trágica realidad que a casi nadie preocupa: el cloruro de sodio, como compuesto químicamente puro, no existe en la naturaleza. Algo análogo ocurre con la sacarosa (azúcar blanco). Biológicamente el organismo no reconoce estas sustancias refinadas y de extrema pureza; es más, las considera tóxicas por su reactividad. Irónicamente, por la misma razón que la industria aprecia al cloruro sódico (capacidad reactiva), el organismo lo rechaza.
Para comprender mejor esta “fobia” corporal hacia los compuestos químicamente puros, podemos usar dos ejemplos burdos pero ilustrativos: la caña de azúcar y la hoja de coca. Estudios hechos en Sudáfrica sobre muestras de orina de dos mil trabajadores de plantaciones de caña de azúcar, no hallaron trazas de glucosa, pese a que en promedio mascaban 2 kg diarios de caña, o sea que ingerían unos 350g de azúcar por día. La explicación es sencilla: mientras la caña mascada es un alimento natural, completo y fácilmente metabolizable, el azúcar refinado es un producto extraño y nocivo para el organismo. Otras investigaciones realizadas en África e India muestran que la diabetes es desconocida en pueblos que no incluyen carbohidratos refinados en su dieta.
Respecto a la coca, es simple observar en los pueblos andinos que el cotidiano consumo de la hoja mascada (benéfica para el apunamiento) no genera los efectos devastadores del extracto refinado, conocido como cocaína. Siempre estamos hablando de productos vegetales, pero de por medio está presente el proceso de refinación y purificación.
EL PROBLEMA DE LA ADITIVACIÓN
Volviendo a la sal refinada de mesa, no todo termina en el “desguace” de sus restantes 82 elementos constitutivos. Luego “sufre” laaditivación de otros compuestos refinados. El caso del yodo y el fluor, ambos minerales tóxicos y reactivos en las formas antinaturales que se adicionan industrialmente. ¿En que argumentos se basa este procedimiento, obligatorio por ley?: resolver problemas tiroideos (yodo) y proteger la salud dental (fluor). Pero nadie toma en cuenta que el cuerpo no puede metabolizar la suplementación artificial de yoduros y fluoruros. Muchos científicos están advirtiendo que estos compuestos son los principales responsables de la formación de nitratos en el estómago; y se sabe que los nitratos son las sustancias cancerígenas más agresivas, y responsables de tumores selectivos en muchos órganos. También son responsables de reacciones alérgicas y otros problemas de salud. Recientes estudios demuestran que la adición de yoduros a la sal de mesa puede causar hipertiroidismo, tiroiditis autoinmune y disminución de fertilidad. Por su parte el fluor, aún en concentraciones bajas, está relacionado con problemas neurológicos y endocrinos, afectando el sistema nervioso y provocando déficit de atención (DDA) en niños y adultos.
A este trágico panorama, se suma la aditivación de otros preservantes, por supuesto que todos legalmente autorizados e incluso sin obligación de ser declarados en las etiquetas. Además de yoduro de potasio, la industria de la sal adiciona dextrosa, un tipo de azúcar que sirve para evitar la oxidación del yodo (¡¡¡o sea que la sal tiene azúcar!!!). Luego le agregan bicarbonato sódico, para que la sal no tome un tinte púrpura tras la adición del yoduro de potasio y la dextrosa. Para evitar el apelmazamiento se adiciona hidróxido de aluminio. Es bien conocida la relación aluminio-Alzheimer y el papel que juega este metal liviano en las disfunciones neuronales, bloqueando los procesos del pensamiento. ¡¡¡Como si no tuviésemos bastante con el uso de utensilios de aluminio en la cocina, latas de aluminio para las bebidas o papeles de aluminio para envolver alimentos!!!
Otros aditivos que encontramos en la sal de mesa son: el carbonato cálcico, que no es otra cosa que un pulverizado de huesos animales, el aluminato de silicio sódico, el ferrocianuro de sodio, el citrato verde de amoníaco férrico, el prusiato amarillo sódico y el carbonato de magnesio.
EL PROBLEMA DEL SODIO
A través de la sal refinada, ingresa diariamente al organismo gran cantidad de sodio, un mineral que si bien es necesario en la química corporal, hoy en día se ha convertido en un problema a causa de su excesivo consumo, sobre todo en formas inorgánicas. El sodio contribuye al mantenimiento del equilibrio ácido-base y del balance hídrico y electrolítico del organismo, siendo necesario para la correcta transmisión del impulso nervioso y para la excitabilidad normal de los músculos. La forma ideal de su consumo es a través de los alimentos frescos, que lo contienen en modo biológicamente asimilable. Pero el enorme consumo de sodio (representa el 40% de la sal común) proviene de productos industriales y a su vez está relacionado con deficiencias del electrolito sinérgico: el potasio. El desordensodio/potasio se ha convertido en una de las grandes causas de los modernos problemas de salud.
Normalmente se piensa -y así lo sugieren los especialistas- que con evitar la sal se resuelve el problema del exceso de sodio. Sin embargo, el consumidor moderno se ve expuesto a la inadvertida presencia de variadas y a veces nefastas formas de sodio en los alimentos industrializados de uso corriente, la mayoría de las cuales no están indicadas en las etiquetas de los productos que las contienen. Un ejemplo es el pan común, que suele aportar 1,3% de sal, o sea unos 500mg de sodio por cada 100g de un producto que se consume en grandes cantidades. Si tenemos en cuenta que la OMS recomienda que las personas adultas no superen los 6 gramos de sal al día (2,4 gramos de sodio), vemos que solo 500g diarios de pan bastan para superar dicho valor.
El cloruro de sodio refinado es ampliamente utilizado por la industria alimentaria, que además de la propiedad saborizante, toma en cuenta el aspecto conservante de la sal. En muchos productos se usa en forma abundante para resaltar cualidades gustativas, mientras que en otros cumple una función preservante. Además, el sodio forma parte de gran cantidad de aditivos alimentarios legalmente autorizados: conservantes, estabilizantes, emulgentes, espesantes, gelificantes, potenciadores de sabor o edulcorantes. Veamos aquí la nómina de 44 aditivos basados en el sodio, que a veces aparecen en las etiquetas con la simple indicación numérica:

Párrafo aparte para el glutamato monosódico, considerado como un aditivo peligroso. Su empleo en la industria alimentaria y en la restauración se remonta a casi medio siglo de historia, como potenciador de sabor. El E-621 (tal su identificación en las etiquetas) actúa como neurotransmisor, implicado en la respuesta sensorial característica del sentido del gusto, al intervenir en la transmisión de señales eléctricas a lo largo de las neuronas. Normalmente se usa en comidas precocidas, sopas, aperitivos, salsas, embutidos, cereales, carnes, mezclas de especias, conservas, alimentos procesados, sopas de sobre, cubitos de caldo, aderezos, etc.
Pese a estar autorizado su uso, numerosos estudios han cuestionado seriamente la inocuidad del glutamato monosódico. Investigadores japoneses lo relacionan con la pérdida de visión a largo plazo y la ceguera. En diversos experimentos se demostró que su inyección directa en el ojo, en concentraciones entre bajas y moderadas, causa daño nervioso. Una investigación clínica de la Universidad Complutense de Madrid, ha revelado que la ingesta de glutamato monosódico aumenta considerablemente el apetito, con el consiguiente riesgo de obesidad. Consumido en exceso y/o desde la infancia, puede modificar el funcionamiento de una zona del cerebro que regula el apetito, aumentando el deseo de comer hasta en un 40%.
En síntesis, el glutamato monosódico puede producir: contracciones musculares en la cara y el pecho, palpitaciones, ataques de asma y jaquecas, esterilidad, obesidad y el famoso “síndrome del restaurante chino” (rigidez muscular en cuello y mandíbula, degeneración de las células del cerebro, problemas gástricos, rigidez y/o debilidad en las extremidades, visión borrosa, mareos, cefaleas, opresión torácica, sensación de calor y hormigueo, aturdimiento y enrojecimiento facial). Puede ser suficiente la ingesta de 3 gramos de esta sustancia para generar dicho síndrome.
PERJUICIOS DE LA SAL REFINADA
Creímos conveniente abordar los daños que produce el consumo de sal refinada, recién después de haber pasado revista a la problemática industrial. Esto nos permite comprender mejor los mecanismos defensivos que debe desarrollar el organismo para intentar neutralizar esta agresión cotidiana. Como hemos visto, el problema tiene dos facetas principales e igualmente graves: la pésima calidad (física, química y energética) y la elevada cantidad que se ingiere.
El consumo principal de sal refinada proviene de los alimentos industrializados, que, como vimos, la utilizan por sus efectosgustativo y conservante. En este aspecto no hay que pensar solo en conservas o típicos productos salados (aceitunas, jamones, quesos, embutidos, fiambres, papas fritas, caldos en cubos o polvos, etc), sino en alimentos aparentemente inofensivos (panificados, o el “saludable” yogurt diario que tiene cloruro sódico como conservante).
Más allá del desguace provocado por la refinación, el principal problema de la moderna sal de mesa para la salud humana, es justamente aquello que la hace un inapreciable ingrediente de la química industrial: su reactividad. Frente a la amenaza que representa este compuesto reactivo (cloruro sódico), el organismo se ve obligado a poner en marcha varios mecanismos de defensa que, además de generar un importante gasto de energía y recursos, no bastan para resolver totalmente la magnitud del problema.
RETENCIÓN DE LÍQUIDOS
Un primer mecanismo de neutralización es la hidratación y se basa en el empleo de agua intracelular o plasma. Este precioso elemento -un recurso limitado en el organismo y originalmente destinado a otros fines fisiológicos- se usa para compensar iónicamente la reactividad de las moléculas de cloruro sódico. Cada gramo de cloruro de sodio que debe ser contrarrestado, exige el consumo de 23 veces su peso en agua intracelular. El producto resultante, aunque haya sido balanceado eléctricamente, igualmente debe ser eliminado como sustancia tóxica. Los riñones pueden excretar sólo una parte: se calculan unos 5/7 gramos diarios, frente a un consumo promedio de 12/20 gramos. Este déficit cotidiano entre lo que ingresa por boca y lo que puede salir por vía renal, es uno de los grandes problemas que nuestro estilo de vida le crea al organismo. Para tomar conciencia de la magnitud del problema, basta multiplicar estos valores por los 30 días de un mes o los 365 días del año!!! Aquí también podemos encontrar el verdadero origen de otra difundida problemática moderna: la retención de líquidos. Esto deriva en aumento de peso y mayor exigencia para órganos (corazón, hígado, riñones), que deben trabajar en exceso.
Otra consecuencia negativa de este mecanismo cotidiano de neutralización, es la merma del volumen de líquido intracelular. Frente al gran caudal que demanda el cuantioso ingreso de moléculas reactivas, el organismo se ve obligado a optar entre atender las naturales necesidades de plasma para la renovación celular (los millones de células que se fabrican diariamente, requieren este fluido corporal como principal material constitutivo) y la exigencia de neutralizar la peligrosa reactividad, usando este vital elemento. La consecuencia a mediano plazo es la paulatina deshidratación celular y corporal, también conocida como senilidad latente. Beber agua no basta para reponer dicha carencia, pues el agua intracelular no es únicamente H2O, sino también los restantes 82 elementos que forman el plasma marino. En síntesis, por un lado el organismo tiene un nefasto exceso de cloruro sódico y por otro, una grave carencia de sal completa y correctamente estructurada.
OBESIDAD Y CELULITIS
El cloruro sódico que no logra eliminarse por vía renal, al permanecer en el cuerpo, genera un segundo mecanismo de neutralización: la captura lipógena. El organismo “reclama” células grasas para “encapsular” al cloruro de sodio “vagante”. Por este medio, el cuerpo busca aislar material toxico que no puede evacuar en el momento, a la espera de algún momento de pausa, en el cual eliminarlo definitivamente del medio. Ese momento sería, por ejemplo, un ayuno, que demás está decir, jamás tiene lugar en nuestro vertiginoso ritmo de vida.
Como consecuencia de este segundo mecanismo de neutralización, el organismo va formando un tejido esponjoso que deposita en la hipodermis, el estrato más profundo de la piel. Este edema acidulado genera dos consecuencias por demás conocidas y temidas:sobrepeso y celulitis. Puede afirmarse que este proceso de neutralizar sustancias tóxicas (no solo el cloruro de sodio) en el tejido graso, es una de las causas profundas de la obesidad, aunque sea algo difícil de aceptar a causa de nuestro condicionamiento cultural. Concretamente: más toxinas quedan en el organismo por colapso de los emuntorios, más incremento de grasa corporal. O dicho de otro modo: la toxemia corporal genera obesidad.
CRISTALIZACIÓN Y ESCLEROSIS
Las moléculas de cloruro de sodio que no consiguen ser eliminadas por los riñones o aisladas en el tejido graso, obligan a desarrollar un tercer mecanismo de supervivencia: la cristalización. Y bien decimos supervivencia, porque la acumulación de más de 35g de estos cristales puede resultar letal para el cuerpo. El cloruro sódico se une con aminoácidos de origen animal (presentes en los productos lácteos y cárnicos) y da lugar a la formación de cristales de ácido úrico. Los cristales que no consiguen ser evacuados del organismo, se depositan en huesos y articulaciones a la espera de una oportunidad futura de excreción (tal como sucede con el tejido graso), provocando dolores osteoarticulares (artritis, gota, reuma) por sus características punzantes. Otros cristales de ácido úrico se recombinan con más cloruro de sodio y oxalatos de calcio, dando lugar a la formación de arenillas y cálculos (vejiga, riñón, vesícula). Otra variante de esta cristalización la encontramos en las paredes de venas y arterias, causando fragilidad capilar y esclerosis. La cristalización es, originalmente, un mecanismo protectivo y de emergencia que el organismo desarrolla para defender la calidad del medio celular y el correcto funcionamiento de las células. Pero la cronicidad de la intoxicación termina por envenenar al sistema, ya que el exceso de cristales no consigue ser evacuado del organismo y ello provoca graves dolencias, también crónicas.
Otros perjuicios del consumo de sal refinada han sido evaluados por distintos investigadores: problemas emocionales, excitación, insomnio, fatiga, úlceras, dependencia adictiva, hipertrofia de las glándulas suprarrenales, pérdida del cabello, estreñimiento, cáncer de estómago y osteoporosis (el exceso de sal incrementa la excreción de calcio a través de la orina, favoreciendo la desmineralización del hueso). La diagnosis oriental brinda indicadores físicos para detectar la excesiva presencia de sal en el organismo: piel oscura, rigidez muscular, mandíbulas apretadas, dientes inferiores sobresalientes, derrames en el blanco del ojo, orina fuerte y heces oscuras y confitadas.

Hands down, Apple’s app store wins by a mile. It’s a huge selection of all sorts of apps vs a rather sad selection of a handful for Zune. The Zune concentrates on being a Portable Media Player. Not a web browser. Not a game machine. Maybe in the future it’ll do even better in those areas, but for now it’s a fantastic way to organize and listen to your music and videos, and is without peer in that regard.
